Veggie Burrito Bowl

Ingredients:

1 can black beans

1 can kidney beans

1 red sweet pepper

1 yellow sweet pepper

1 orange sweet pepper

1 bag of thawed riced cauliflower, drained

1/2 red onion

3 tsp. cumin

2 tsp. chili powder

Salt, pepper, garlic salt (to taste)

Optional Toppings: cilantro, avocado, shredded lettuce, and guacamole

Directions:

Combine the burrito bowl ingredients and toss in seasoning. Lay over a bed of organic spinach for a delicious quick and easy salad. Top with optional toppings.
