Taco Zoodle Casserole

  • 3 medium zucchini, spiralized
  • 1 lb organic, antibiotic & hormone free ground beef
  • 1 package clean taco seasoning or 1 + tsp each: cumin, garlic powder, chili powder
  • 1 can organic tomatoes with green chiles (or 1 can of each separately)
  • 1 can tomato sauce
  • ¼ cup red onion
  • ½ cup green and/or red bell pepper (optional)
  • 2 cups mexican style shredded cheese
  • Optional toppings: cilantro, avocado, shredded cheese, red onion, organic sour cream

 

In a large skillet on medium heat, cook the ground beef adding in the taco seasoning, onion, bell pepper if using. Stir in the diced tomatoes and tomato sauce. While this is slowly simmering spiralize the zucchini (unless you bought pre- spiraled!) and squeeze out as much liguid as possible with a paper towel or towel. Evenly place the zucchini in a 9x13 baking dish. Top the zucchini with the meat mixture and spring the cheese on top. Bake for 30 minutes at 350 degrees F or until the cheese is melted. Top with optional toppings.
