Spiced Seed Pudding with Stewed Apples

Servings: 2 

Ingredients:

1 can of full-fat coconut milk

1/2 cup water 

1/4 cup chia seeds 

1/4 cup ground flax seeds 

1 tsp vanilla extract 

1/2 tsp cinnamon 

1/4 tsp ground ginger 

1/8 tsp of nutmeg 

1/4 tsp salt 

Dash of cardamom 

2 Granny Smith apples - chop and cook in cinnamon and 1 Tbsp of approved sweetener 

1/2 cup of walnuts to top 

Directions

Add coconut milk, chia, flax, vanilla, and spices to a large bowl. Stir well and let sit for 10 minutes. Stir again to remove any large clumps and set in the refrigerator overnight. To enjoy, spoon half of the mixture into a bowl and top with stewed apples and walnuts.
