Slow Cooker Beef Stew

Ingredients:

2 lbs. grass-fed beef stew meat

4 carrots, coarsely chopped

2 cups beef broth

2 tbsp. Worcestershire sauce

2 tbsp. balsamic vinegar

6 oz. tomato paste

2 cups fire-roasted tomatoes (optional)

1 cup mushrooms, sliced

1 onion, sliced

1 tsp. garlic powder

1 tsp. onion powder

2 tbsp. fresh dill, chopped

3 sprigs thyme

3 bay leaves

2 tbsp. avocado oil

4 tbsp. arrowroot powder

1 tsp. sea salt

Directions:

Place all ingredients into a slow cooker. Cook on low for 6-8 hours. Top with sour cream if desired and serve. Vegetarian Plan Tip: Replace meat with 2 cups of veggies of your choice from the Replace Food List.
