Original Mama Livingood's Pasta Salad

Total Time: 20 minutes + chill time

Serves: 4-6

  • 1 can olives, sliced
  • 1 cup carrots, sliced
  • 1 cup green peppers, diced
  • 1-2 cups broccoli, cut into small bites
  • 1 cup cauliflower, cut into small bites
  • 1 box spiral bean noodle of choice (garbanzo bean, lentil, etc)
  • 1 jar Italian dressing (no bad oils) (brand recommendation: Primal Kitchen)

 

Prepare bean noodles as instructed on the box. Cut all vegetables and put them into a bowl. Once the noodles are tender add to the vegetables. Pour the Italian dressing over top and chill before serving.
