Mushroom Walnut Taco Meat

Servings: 4

Ingredients: 

1 cup raw walnuts 

8 ounces of baby bella mushrooms 

1/2 yellow onion, diced

3 cloves of garlic, minced 

1 Tbsp coconut aminos 

2 tsp tomato paste 

2 tsp chili powder 

2 tsp cumin powder 

1 tsp dried oregano 

salt and pepper to taste 

the juice of 1 Lime

1/4 cup cilantro, chopped  

Directions: 

Soak walnuts for 20-30 minutes in warm water. Sautee onions and garlic on medium heat until soft.
Add walnuts and mushrooms to a food processor to chop into a ground texture. Add onion and garlic to a medium pan and cook until fragrant. Add the ground mixture into the pan with the onion and garlic. Add all spices, coconut aminos, tomato paste, salt, and pepper to taste. Saute the walnut taco meat until the mushrooms are cooked. Remove from heat and add lime juice and cilantro, if desired. Use for tacos, burrito bowls, or anywhere else you would use taco “meat”
