2 chicken breasts 1 cup almond flour 1/2 cup shredded parmesan cheese 2 eggs 1-2 tbsp coconut oil or avocado oil 1 tsp Italian seasoning, salt, pepper 1 jar marinara sauce (watch ingredients - no sugar added) 1 cup shredded mozzarella cheese Fresh parsley (optional garnish)
Cut chicken breasts in half lengthwise. One half of the chicken breast at a time, put into a large ziploc baggie, seal, and pound flat until about ⅓ inch thick. Repeat until all breasts are flattened.
In a bowl, mix almond flour, ⅛ cup parmesan cheese, italian seasoning, salt, and pepper. Beat eggs, dip and coat each chicken breast and then coat in the almond flour mixture. Melt oil in a large frying pan and “fry” each chicken breast on both sides until golden brown, approximately 3 minutes on each side.
In a baking dish, pour marinara sauce, saving 1 cup for later. Place the chicken breasts in sauce. Pour the remaining sauce over the center of the chicken breasts. Sprinkle each breast with mozzarella and remaining parmesan cheese. Bake at 400 degrees F for 20 minutes. Remove and let set before serving. Can garnish with parsley, if desired.
