Healthy Coleslaw

Challenge Approved 

Serves: 4-6

Ingredients:

1/2 head purple cabbage, shredded

1/2 head of green cabbage, shredded (*or shredded jicama)

1 cup carrots, shredded (or 1-2 bags of pre-shredded slaw) 

1 cup Challenge Approved mayonnaise

1 tbsp. apple cider vinegar

1/8 cup Challenge Approved sweetener

1/4 tsp. dry mustard (optional)

1 tsp. fresh lemon juice (optional) 

Salt and pepper to taste 

    Directions:

    Whisk all dressing ingredients in a bowl until smooth. Add in the vegetables and stir until coated. Adjust dressing amount, as desired. Chill before serving.
