Healthy Coleslaw

Total Time: 20 minutes + chill time

Serves: 4-6

  • ½ head purple cabbage, shredded
  • ½ head green cabbage, shredded (or try swapping out for shredded jicama)
  • 1 cup carrots, shredded (or 1-2 bags of pre-shredded slaw) 
  • 1 cup healthy mayo (no bad oil - recommended brand: Primal Kitchen, Chosen Foods)
  • 1 tbsp apple cider vinegar
  • 1/8 cup Swerve Sweetener
  • 1/4 tsp dry mustard (optional)
  • 1 tsp fresh lemon juice (optional)
  • Salt and pepper, to taste (can tweak the dressing as much or little as desired and to taste)

Whisk all dressing ingredients in a bowl until smooth. Add in the vegetables and stir until coated. Chill before serving.
