Healthy Cinnamon Apple Muffins

Ingredients:

1/2 cup coconut flour

4 eggs

1 1/2 tsp. cinnamon

1 tsp. baking soda

1/2 cup full-fat coconut milk

1/2 cup butter, melted and slightly cooled

1/8 cup organic raw honey (or 1/2 scoop Livingood Daily Collagen + Multi Vanilla + 1/8 cup almond butter)

2 tsp. vanilla extract

1 tsp. apple cider vinegar

1/2 tsp. sea salt

1 granny smith apple, peeled and finely diced

Directions:

Put all ingredients (except the apples) in a food processor or in a bowl. If using a bowl, separate dry and wet ingredients first, then mix together. Mix until well combined and smooth. Add in the diced apples and stir to combine well. Fill, parchment muffin lined, muffin tin approximately ¾ full. Bake approximately 25 - 30 minutes at 350°F, or until lightly browned.
