Healthy Cinnamon Apple Muffins

Serves 8

  • ½ cup coconut flour
  • 4 eggs
  • 1 ½ tsp cinnamon
  • 1 tsp baking soda
  • ½ cup full- fat coconut milk
  • ½ cup butter, melted and slightly cooled
  • ⅛ cup organic raw honey (if doing no sugar try using ½ scoop Livingood Daily Collagen + ⅛ cup almond butter)
  • 2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • ½ tsp sea salt
  • 1 granny smith apple, peeled and finely diced

Put all ingredients (except the apples) in a food processor or in bowl. If using a bowl separate dry and wet ingredients first, then mix together. Mixing until well combined and smooth. Add in the diced apples and stir to combine well. Fill, parchment muffin lined, muffin tin approximately ¾ full. Bake approximately 25 - 30 minutes at 350 degrees F or until lightly browned.
