Baked Eggs in Avocado

Ingredients:

1 avocado

2 eggs

Salt and pepper (to taste)

Chives or any fresh herb (optional)

Direction:

Slice the avocado in half and remove the pit. Place in a small baking dish. Crack an egg into each avocado half. Bake at 425 degrees F for approximately 15-20 minutes. Remove from the oven and add salt, pepper, and chive, if desired! 

Vegetarian Plan Tip: Approved for vegetarians that eat eggs and/or dairy.
