Fried Eggs & Avocado

Ingredients

  • 1 avocado
  • 2 eggs
  • salt, pepper (to taste)
  • chives or any fresh herb (optional)

Direction

  1. Slice the avocado in half and remove the pit. 
  2. Place in a small baking dish. 
  3. Crack an egg into each avocado half.  B
  4. Bake at 425 degrees F for approximately 15-20 minutes. 
  5. Remove from the oven and add salt, pepper, and chives, if desired.  

Vegetarian Plan Tip: Approved for vegetarians that eat eggs and/or dairy.
