Eggs And Turkey Bacon

Serves 2 

15 Minutes

4 organic eggs

1 cup vegetables (diced) - any combination of bell peppers, spinach, zucchini, mushrooms, broccoli, onion, etc. - or whatever vegetables you have on hand

1/2 cup turkey bacon or turkey sausage (pre-cooked) (optional)

Salt and pepper (to taste)

2 tbsp coconut oil

Optional toppings: avocado, organic cheese (cheddar, feta, goat, etc), chives

Whisk eggs, veggies, pre-cooked meat, if adding, and seasonings in a bowl. In medium pan, heat oil over medium/low heat. Cook and scramble for 6-8 minutes until eggs are cooked through. Top with favorite toppings.
