Chipotle Bowls

Serves 2

2 chicken breasts, cubed
1 tbsp avocado or olive oil
Salt, pepper, garlic powder (to taste)
1 tbsp cumin
1/2 tbsp chili powder
1 lime
Cilantro Cauliflower rice, as much as desired (fresh or frozen)
Optional toppings: salsa, sour cream, red onion, organic corn, guacamole, shredded cheese, lettuce

In a small pot put as much cauliflower rice as desired and warm as instructed. Once done, drizzle with lime juice and add chopped cilantro. In a frying pan, with oil, saute chicken cubes in all of the dry seasoning until cooked through. Once the chicken is done start your bowl. Rice on the bottom, add chicken and desired toppings. Simple and yummy!
