Chili

Challenge Approved

Serves 4

Ingredients:

1 small onion, diced

1 lb. grass fed beef or bison

1 large can organic diced tomatoes

1 small can organic tomato sauce

2 cans organic kidney beans

1 can organic black beans (optional)

2 tbsp. chili powder

3 tbsp. cumin

Salt, pepper, garlic powder, cayenne pepper (optional) - all to taste

Optional toppings: organic sour cream, chives, organic cheese

Directions:

Brown beef in a large pot.  Add all other ingredients and simmer until beans are soft.  Or can leave all ingredients in a slow cook for a few hours on low.  Add toppings as desired.

Vegetarian Plan Tip: Remove meat for an all bean chili, add pea protein crumbles if desired
