Ingredients:
1 Chicken breast (cooked)
2 cups spinach
1/4 granny smith apple
1/4 cup nuts of choice: sunflower seeds, pecans, walnuts, etc. (Lifestyle Approved option: Candied Pecans)
¼ cup feta cheese or pecorino Romano cheese
Dressing:
1/4 cup apple cider vinegar
1/2 cup olive oil
2 tsp. Dijon mustard
Salt, pepper, garlic powder (or minced clove), to taste
Directions:
Combine all ingredients together and whisk until well mixed.
