Cauliflower Mac & Cheese

Serves 2

40 Minutes

1 large head of cauliflower (chunked)

½ cup heavy organic whipping cream

1 cup organic cheddar cheese

½ cup mozzarella cheese

¼ cup parmesan cheese

Seasonings: 1 tsp onion powder, 1 tsp garlic powder, salt and pepper (to taste)

Optional add in: turkey bacon (cooked)

Steam the cauliflower until slightly tender, about 5 minutes. Move the florets to a lightly greased baking dish and add cooked turkey bacon if desired. In a small pan over medium heat, add the heavy cream and bring it to a light boil and whisk in the seasonings. Turn down the heat and add the cheddar and mozzarella cheese and stir until melted. Pour over the cauliflower and sprinkle the Parmesan cheese on top. Bake for 15-20 minutes or until brown and bubbling.
