Deconstructed Burger Salad

Servings: 2

Ingredients: 

1 head of romaine lettuce

10-15 cherry tomatoes, halved 

1/2 red onion, diced

1/4 cup pickles, chopped

1 avocado 

1 cup pea protein crumbles 

2 Tbsp sesame seeds 

Sesame Island Dressing: 

1/4 cup of tahini 

2 Tbsp water 

2 Tbsp unsweetened ketchup 

1 Tbsp yellow mustard 

1 tsp apple cider vinegar 

1/4 shallot, minced 

1 Tbsp pickle relish or minced pickles 

Salt to taste 

Directions: 

Combine all dressing ingredients in a small bowl and stir until they come together. Chop lettuce and split it between two bowls for the base. Slice the vegetables as desired and add half of each vegetable to each bowl. Warm the pea protein crumbles and divide between the salads. Add 1 Tbsp of sesame seeds to each bowl. Drizzle on the dressing and enjoy!
