Brisket Taco Salad

Serves: 4

Ingredients:

2 lbs. grass-fed brisket (approximately 1/4-1/2 pound per person)

1 jar salsa verde

Cotija cheese (shredded)

Optional toppings: avocado, salsa verde, sour cream, red onion, cilantro, lime, shredded lettuce, spinach, or romaine lettuce head

Directions:

Put brisket meat in a slow cooker on medium for 6-8 hours with a very small amount of water and approximately 1/3 of the jar of salsa verde (cook until tender and easy to pull apart with a fork). Once the meat is done put in a lettuce wrap or on a bed of spinach and top with cheese and salsa and any other desired toppings!
