BBQ Chicken & Roasted Veggies

Serves 2

40 Minutes-5 Hour (Depending on Cooking Method)

2 chicken breasts
Salt, pepper, garlic powder (to taste)
1/2 cup BBQ sauce (no sugar or bad oil in ingredients)
Vegetable of Choice: broccoli, cauliflower, sautéed spinach, mushrooms
1-3 tbsp olive oil
Salt and pepper (to taste)
Garlic salt (optional)

Pour the BBQ sauce over the chicken breasts and bake at 350 degrees F for approximately 45-60 minutes. You can also put the chicken and sauce in a slow cooker if you prefer (2-3 hours on high, 4-5 hours on low). Toss the broccoli or cauliflower florets with olive oil and seasoning. Spread them out on a sheet pan and roast at 425 degrees F until the edges are crispy and the stems are tender. Approximately 30 minutes. Can broil them at the end if want them to be more crisp. Or sautee 1-2 cups of spinach in a pan with olive oil and salt until spinach is wilted.
