Ingredients:
1 small onion, diced
1 green bell pepper, sliced into bite - size strips
1 rotisserie chicken, chopped (use the meat from 2 chicken breasts and 2 thighs)
2 cups low - sodium, organic chicken broth
1 large can organic diced tomatoes
1 small can organic tomato sauce
1 can cannellini beans
1 can organic black beans
1 can pumpkin puree
2 tbsp. chili powder
3 tbsp. cumin
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Salt, to taste
Pepper, to taste
Garlic powder, to taste
Cayenne pepper (optional)
1 tbsp. avocado or coconut oil
Optional toppings: organic sour cream, chives, organic cheese
Directions:
Warm oil in a large pot over medium heat. Add onion and bell pepper, sauté until tender, about 12 minutes. Add broth, tomatoes beans, pumpkin, and seasonings into the pot. Stir all ingredients. Lower heat to low and cook for 25 minutes. Add chopped chicken, mix, and finish cooking for about 10 minutes. Top with optional toppings, and enjoy!
Optional Slow Cooker Directions: Follow all recipe instructions and add ingredients (except for toppings) into your slow cooker. Cook for 8 hours on low or 4 hours on high. Serve with toppings.
