Pumpkin Bread

Makes 10 Slices

1 Hour + 15 minutes 

  • 3 eggs
  • 1 can organic pumpkin puree
  • 1 3/4 cups almond flour
  • 1/4 cup tapioca flour
  • 1/4 cup raw local honey or pure maple syrup (or Stevia or Swerve + add coconut milk option)
  • I tbsp vanilla
  • 1 tbsp cinnamon
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • Optional: can add 1/3 cup full fat coconut milk (chill and remove only the top thick portion, not the water portion)

 

In a bowl, whisk together the eggs, pumpkin puree, sweetener, vanilla. and cinnamon. Add the remaining dry ingredients until smooth. Pour into small, parchment paper lined loaf pan (can also line the paper with little coconut oil). Bake at 350 F degrees F for approximately 1 hour or until golden and a toothpick inserted comes out clean. Allow to cool completely before cutting into slices.
