Panera Fuji-Apple Salad Wannabe

Salad Ingredients:

2 Chicken breasts

1 bag organic spinach (approximately 4 cups)

1/4 of red onion (thinly sliced)

2 cups red apple (thinly sliced or buy a bag or organic dried apple chips with no other ingredients)

1 cup candied pecans

1/2 cup gorgonzola cheese crumbles

1 tomato, diced

Directions:

Bake or grill chicken by coating with coconut or avocado oil and salt/pepper. Prep the rest of the needed ingredients.

Vinaigrette Dressing:

1/2 cup olive oil

1/4 cup white balsamic vinegar

3 tbsp. raw local honey

1/2 tsp. salt

1/4 tsp. pepper

⅛ tsp. garlic powder

Candied Pecans:

2 cups pecans

1 tbsp. coconut oil

2 tbsp. maple syrup or coconut nectar

1/2 tsp. sea salt

Directions:

Whisk all ingredients together until blended. Pour over your salad ingredients. Toss all ingredients in a bowl and spread out on a parchment paper lined baking dish. Bake at 350 degrees F for 15-20 minutes. Let cool before serving.
