Nutmeg Cream Veggies

Ingredients:

1/2 cup raw cashews

1/4 cup water

1/8 tsp. salt, or to taste

1/8 tsp. nutmeg

4 cups of spinach

1 can of drained and rinsed white beans

2 cups white button or Cremini mushrooms

1 1/2 cups sliced zucchini

Directions:

Put cashews in a food processor or high-powered blender and pulse until they turn into tiny crumbles-- you want about the texture of Parmesan cheese. Add the water, salt, and nutmeg, and blend until it becomes creamy and well-combined. Taste for desired flavor. Steam zucchini & mushrooms until almost fully cooked, then add in spinach and steam for 3-4 additional minutes. Mix in beans. Pour cashew mixture over steamed veggies and serve.
