Ingredients:
Mediterranean Chicken:
2 chicken breasts, 3-4 ounces each (cut into chunks if you want to make kabobs for more flavor)
1/2 cup plain, unsweetened Greek Yogurt
1 tsp. olive oil
1 tsp. lemon juice
1 tsp. minced garlic
1/4 tsp. paprika
1 tsp. dill
1/2 tsp. dried oregano
1/2 tsp. turmeric
Salt and pepper, to taste
Cauliflower rice, as much as desired (fresh or frozen)
Tzatziki Sauce:
1 cup plain, unsweetened Greek Yogurt
1 tbsp. lemon juice
1 tsp. minced garlic
1-3 tbsp. chopped dill, to taste
1 tbsp. olive oil
Salt and pepper, to taste
1 large cucumber
Directions:
In a bowl, combine all ingredients and mix until chicken is coated. Refrigerate and marinate for a minimum of one hour. Grill or bake the chicken until cooked. Serve over cauliflower rice. Cut the cucumber in half, lengthwise and use a spoon to remove the seeds. Slice the cucumber and put in a colander and sprinkle with salt. Let it sit for about 15-20 minutes to draw some water out, wipe dry with a paper towel. Put all ingredients, except the Greek yogurt in a food processor and process until well blended. Stir in the Greek yogurt and add any flavors to taste. Refrigerate to chill before serving.
