Mediterranean Chicken and Tzatziki Sauce

Serves 2

45 Minutes + Chill Time

Mediterranean Chicken:
2 chicken breasts (cut into chunks if you want to make kabobs for more flavor)
1/2 cup plain Greek Yogurt
1 tsp olive oil
1 tsp lemon juice
1 tsp minced garlic
1/4 tsp paprika
1 tsp dill
1/2 tsp dried oregano
1/2 tsp turmeric
Salt and pepper, to taste
Cauliflower rice, as much as desired (fresh or frozen)

In a bowl, combine all ingredients and mix until chicken is coated. Refrigerate and marinate for a minimum of one hour. Grill or bake the chicken until cooked. Serve over cauliflower rice.
Tzatziki Sauce:
1 cup plain Greek Yogurt
1 tbsp lemon juice
1 tsp minced garlic
1-3 tbsp chopped dill, to taste
1 tbsp olive oil
Salt and pepper, to taste
1 large cucumber

Cut the cucumber in half, lengthwise and use a spoon to remove the seeds. Slice the cucumber and put in a colander and sprinkle with salt. Let it sit for about 15-20 minutes to draw some water out, wipe dry with a paper towel. Put all ingredients, except the Greek yogurt in a food processor and process until well blended. Stir in the Greek yogurt and add any flavors to taste. Refrigerate to chill before serving.
