Marinated Chicken Breast

Total Time: 25 minutes + marinade time (4+ hours)

Serves: 2 

  • 2 chicken breasts
  • 1/8 cup extra virgin olive oil
  • 1/8 cup balsamic vinegar or other vinegar
  • 1/8 cup soy sauce alternative such as Braggs Liquid Aminos
  • 1/8 cup Worcestershire sauce
  • 1 tbsp lemon juice
  • 1/8 cup raw local honey
  • 1 tsp dried rosemary (optional)
  • 2 tbsp Dijon or Spicy Brown mustard
  • Salt, pepper, garlic powder to taste

 

Combine all ingredients, except for the chicken, in a large bowl and whisk together. Remove half of the marinade and keep for basting the chicken later, if desired. Place chicken in a large baggie and pour marinade over the top. Close securely. Marinate for at least 4 hours. Remove the chicken from the marinade and grill chicken for 5 to 6 minutes on each side or until cooked through. Baste the chicken occasionally with the reserved marinade if desired.
