Greek Salad

Serves 2

15 Minutes

Salad:
4 cups spinach
1 medium cucumber
1 cup sliced roma tomatoes
½ thinly sliced red onion
1 cup pitted Kalamata olives (or black olives), halved

Dressing:
2 tablespoons olive oil
1/4 cup fresh squeezed lemon juice
2 tbsp red wine vinegar (or 2 tbsp apple cider vinegar)
2 tbsp fresh chopped parsley
2 tsp dried basil 2 tsp garlic, minced (or powder)
1 tsp dried oregano Sea salt and pepper, to taste


Whisk together all of the dressing ingredients. Prepare all of the salad ingredients (except the spinach), and mix them in a large bowl. Pour desired amount of dressing over veggies, and toss. Put the veggies on top of spinach and add toppings of your choice. Pour the remaining dressing on top!
