Greek Salad

Serves: 2

Salad: 

4 cups spinach

1 medium cucumber

1 cup sliced Roma tomatoes

1/2 thinly sliced red onion

1 cup pitted Kalamata olives (or black olives), halved

1-2 tbsp. Hummus

Dressing:

2 tbsp. olive oil

1/4 cup fresh squeezed lemon juice

2 tbsp. red wine vinegar (or 2 tbsp. apple cider vinegar)

2 tbsp. fresh chopped parsley

2 tsp. dried basil

2 tsp. garlic, minced (or powder)

1 tsp. dried oregano

Sea salt and pepper, to taste

Directions:

Whisk together all of the dressing ingredients. Prepare all of the salad ingredients (except the spinach), and mix them in a large bowl. Pour desired amount of dressing over veggies, and toss. Put the veggies on top of spinach and add toppings of your choice. Pour the remaining dressing on top!
