DLG's Mama-In-Law's Pasta Salad

Total Time: 20 minutes + chill time

Serves: 4-6

  • 1 box macaroni bean noodle of choice (garbanzo, etc)
  • 1 tomato, diced
  • 1 cucumber, diced
  • 1 green pepper, diced
  • 1 cup avocado oil mayo
  • ¼/ cup apple cider vinegar
  • ¼ cup Swerve sweetener
  • Salt and pepper, to taste

 

Prepare bean noodles as instructed on the box. Cut all vegetables and put them into a bowl. Once the noodles are tender add to the vegetables. In a separate bowl, combine all of the dressing ingredients and mix well. Pour over the bean noodle and vegetable combination and mix until well coated. Chill before serving.
