Creamy Cucumber Dill Salad

Total Time: 15 minutes + chill time

Serves: 2-4

  • 2 cucumbers, sliced
  • 1/4 cup red onion, sliced
  • 1/4 cup greek yogurt (or avocado oil mayo, or a combination) 
  • 1 lemon, juice and zest (or 1/4 cup apple cider vinegar)
  • 2 tbsp dill, chopped salt and pepper, to taste
  • 1 tsp Swerve sweetener (optional)

 

Mix all ingredients together until coated. Chill before serving.
