Ingredients:
2 cucumbers, sliced
1/4 cup red onion, sliced
1/4 cup Greek yogurt (or Challenge Approved mayonnaise)
1 lemon, juice and zest
1/4 cup apple cider vinegar
2 tbsp. dill, chopped
Salt and pepper to taste
1 tsp. Challenge Approved sweetener (optional)
Directions:
Mix all ingredients together until coated. Chill before serving.
