Cinnamon Berry Flax Meal

Ingredients:

2 tsp. ground cinnamon

1/2 tsp. ground nutmeg

1/2 tsp. vanilla extract

5 tbsp. granulated Stevia

3 1/2 cups of full-fat canned coconut milk

1/4 cup cashew cream

2/3 cup flaxseed meal

2/3 cup chia seeds

2/3 cups shredded unsweetened coconut flakes

1 cup fresh mixed berries

Directions:

Put cashew cream and coconut milk in a large saucepan and heat over medium heat until cashew cream is softened, and mixture begins to bubble. Adjust heat to medium-low and then add coconut, flaxseed meal, and chia seeds to the saucepan. Mix the ingredients very well together. Add stevia, cinnamon, nutmeg, and vanilla extract. Serve when hot.
