Challenge Approved
Ingredients:
1 chicken breast, diced into small pieces
3 cups cauliflower rice (I bought frozen)
1/2 cup sliced carrots
1/8 cup sliced onion (or green onion)
Desired amount of peas or broccoli, (optional)
1 tbsp. butter
3 tbsp. Challenge Approved Aminos (Challenge Approved Soy sauce alternative)
1 egg
Salt, pepper, garlic powder, to taste
Directions:
In a large pan warm cauliflower rice. In a small pan, scramble egg in 1 tbsp. butter, add and sauté vegetables (may need to add more butter) add to cauliflower rice when done. Add cooked chicken breast, Challenge Approved aminos, and seasoning.
