Chicken & Cauliflower Casserole

  • 2 chicken breasts, cooked
  • 1 head cauliflower, cut into small chunks
  • ⅓ cup olive oil
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 3 tbsp hot pepper sauce (watch ingredients for no sugar)
  • Sea salt and pepper (to taste)
  • ⅓ package turkey bacon, cooked and chopped
  • 1 package organic shredded cheddar cheese
  • 2 green onions (optional) 

 

Mix the olive oil, seasonings, and hot sauce together in a bowl. Add cauliflower and chicken and cover everything in the mixture. In a 8x8 baking dish, bake on 425 degrees F for approximately 45 minutes. Top with cheese and bacon and continue to bake until the cheese is melted. Can top with green onion before eating if preferred.
