Chicken Caprese Salad

Serves 2

2 chicken breasts (cut into thin strips)
4 cups spinach
1 avocado (sliced)
1 cup cherry or grape tomatoes (halved)
½ cup mozzarella balls (diced)
¼ cup basil leaves (thinly sliced)
Salt and pepper (to taste)

Dressing:
¼ cup balsamic vinegar
2 tbsp olive oil
1 tsp dried basil
1 tsp salt
½ tsp garlic powder (or minced)
2 tsp Brown Swerve (brown sugar substitute)


Whisk the dressing ingredients together. Pour approximately 4 tbsp of the dressing over the chicken in a baking dish and stir to coat the chicken. Keep the rest of the dressing for later. Heat 1 tbsp of oil in a pan and sear the chicken over medium heat on each side until golden on the outside and cooked through. Put the cooked chicken and the rest of the salad ingredients over spinach and top with basil strips and the remaining dressing. Season with salt and pepper to taste.
