Chicken Broccoli Alfredo

  • 2 chicken breasts, cut into chunks
  • 2 cups broccoli, chunked
  • 4 tbsp butter, divided
  • Sea salt, pepper to taste
  • 3 garlic cloves, minced (or use garlic powder)
  • ½ lemon, juiced
  • 1 cup organic heavy whipping cream
  • ⅔ cup parmesan cheese, grated
  • If you have hit your goals you could also add a bean noodle to this dish

In a pan, melt 2 tbsp butter over medium high heat. Add the chicken, garlic, seasoning to the pan and cook until the chicken is cooked through. Remove the chicken from the pan for a few minutes. Add the cream, lemon, parmesan, and remaining butter to the pan and simmer for a minute. Add broccoli to the pan and steam for a few minutes until slightly tender. Add the chicken back in and coat with the sauce. Serve with added parmesan, if desired.
