Broccoli Salad & Mixed Nuts

Serves 4

20 Minutes + 1 Hour Chill Time

1 cup soy-free vegan mayonaise
2 tbsp apple cider vinegar
1 tbsp sweetener (Swerve, stevia, or monk fruit)
2 heads broccoli (cut into florets)
1 cup mixed bell peppers (diced)
1/8 cup red onion (diced tiny)
1/4 cup nuts or seeds, (chopped if necessary - almonds, walnuts, sunflower seeds, etc.)
Optional: add slivered Brussels sprouts, carrots, or cabbage for added nutrients
1 cup mixed dry-roasted or raw nuts (almonds, cashews, pistachios, walnuts, etc)

In a large bowl, mix together the mayo, vinegar, and sweetener to create a“sauce”. Add in the rest of the ingredients and stir until coated completely. Add more or less “sauce” as desired. Refrigerate for an hour before serving for the best flavor and toss once more before eating. Enjoy with ¼ cup of nuts.
