Asian Brussels Sprout Salad

Serves: 2 

Ingredients:

1 lb. Brussel sprouts (ends of and shredded)

1 cup carrots (shredded)

1 bunch cilantro (chopped)

3 cups cabbage (purple or green)

1 red bell pepper (diced)

1/2 cup green onion (diced)

1/2 cup cashews (chopped)

1/2 cup slivered almonds

Dressing:

2 tbsp. olive oil

2 tbsp. sesame oil

2 tbsp. coconut aminos (or Braggs Liquid Aminos)

2 tbsp. rice vinegar

1 tbsp. ginger (minced or powder)

1 garlic clove (minced or powder)

1 tbsp. maple syrup (optional)

*For Creamy Dressing put all ingredients in food processor along with 1 tbsp. spoon of tahini or a nut butter

Directions:

Slice, shred and prepare all salad ingredients and mix together in a bowl. Put all dressing ingredients in a bowl or food processor and mix until well blended together. Pour dressing over salad ingredients and toss until well coated.

*Remove maple syrup for a Challenge Approved option.
