Asian Brussels Sprout Salad

Serves 2 

20 Minutes

1 lb brussels sprouts (ends of and shredded)
1 cup carrots (shredded)
1 bunch cilantro (chopped)
3 cups cabbage (purple or green)
1 red bell pepper (diced)
½ cup green onion (diced)
½ cup cashews (chopped)
½ cup slivered almonds

Dressing:
2 tbsp olive oil
2 tbsp sesame oil
2 tbsp coconut aminos (or Braggs Liquid Aminos)
2 tbsp rice vinegar
1 tbsp ginger (minced or powder)
1 garlic clove (minced or powder)
1 tbsp maple syrup (optional)

*For Creamy Dressing put all ingredients in food processor along with 1 tbsp spoon of tahini or a nut butter)

Slice, shred and prepare all salad ingredients and mix together in a bowl. Put all dressing ingredients in a bowl or food processor and mix until well blended together. Pour dressing over salad ingredients and toss until well coated.
